Fibrous proteins are proteins containing polypeptide chains that are well organized in parallel fashion along a single axis, thus producing long fibers and large sheets. These proteins are water insoluble.

Globular proteins unlike fibrous proteins, are more disordered and are spherical in shape. Globular proteins are water-soluble and form colloids in water.
