The digestion of protein starts in stomach in the presence of enzyme pepsin and Hcl. Hcl provides acidic pH to denature the protein present in the food then pepsin breaks proteins into small polypeptides and amino acids. When this food which is mixed with pepsin and HCl (Chyme) reaches small intestine then sodium bicarbonate gets released from pancreas to neutralize the Hcl present in the Chyme. Pancreas also releases chymotrypsinogen, trypsinogen and elastase. Chymotrypsinogen and trypsinogen are inactive form.
