Lipids are energy molecules that provide energy to the body secondary to glucose (carbohydrate). Lipids are composed of fatty acids and glycerol (or other alcohols). Fatty acids are divided into two major types based on the presence or absence of double bonds: saturated fatty acids (no double bonds) and unsaturated fatty acids (contains double bonds).

Unsaturated fatty acids with single double bonds are called monounsaturated fatty acids (MUFA), and fatty acids with more than one double bond are called polyunsaturated fatty acids (PUFA).
