Fernandez 1 Tad Fernandez Sourdough project: Part 1 Data Collection 4/22 Bio 260 Taleen Der-Ghazarian April 21, 2024 Sourdough project: Part 1 Data Collection 4/22: Purpose: The purpose of this lab is to determine if microbes, specifically bacteria and yeast can successfully colonize within our sourdough starter kit; this will help us understand if fermentation is possible by mixing sugar and starches within our starter kit. Data: My sourdough starter kit came in late last week. Due to familial obligations, I was able to start my kit on 4/22/24 at 1200. Currently, nothing out of the ordinary has happened. Tomorrow 4/23/24 I’ll have the ability to check my sourdough kit after it has rested for 24 hours. My hypothesis from common knowledge is that the mixture that was poured will rise possible a centimeter or two and the pH of the mixture will change due to microbes, bacteria, and natural yeast fermentation. Gasses will expand the longer you let the mixture sit and the fermentation process will be further along. What I’ve learned: I’ve learned how to properly don and doff personal protective equipment PPE during lab. I was able to implement an organized lab station away from small children so that my experiment can successfully be done in a safe clean area. After reviewing videos and reading material from the links given to us for this project, it’s fascinating to see what can happen once time elapses regarding our sourdough kits. Content frustrations: The thing I found most frustrating was waiting for my sourdough kit. However, this wasn’t the only bump in the road. Once I started on my sourdough kit, I accidentally mixed the water into my flour jar (where we store all flour for baking) opposed to the 10mL tumbler that was provided by lab. Due to my clumsiness, I successfully knocked over my original mixture and had to start all over. I was able to recover, find a bigger table to place all materials given in our starter kit, and practice having patience.
