Solution: Alanine (amino acid) is more soluble in water.

Explanation of Solution

Solubility of any solute in a solvent depends upon the solute-solvent interaction. Greater the solute-solvent interaction, greater will be the solubility.
Alanine (amino acid) is a polar compound containing NH2 and COOH group. If it is dissolved in water, it will form hydrogen bonding with the water molecule (polar in nature coming polarized OH group) while if it is dissolved in hexane, it will only form dispersion forces with the hexane molecule.
As the strength of hydrogen bonding is greater than dispersion forces. The solute-solvent interaction in solution of alanine in water is greater than that of solution of alanine in hexane. Hence, alanine (amino acid) is more soluble in water.

Conclusion

Alanine (amino acid) is more soluble in water because the solute-solvent interaction in the solution of alanine in water is greater than the solution of alanine in hexane.
