To explain: Identify whether the +H3N–CH2–COO- partition occurs in water or palmitic acid micelles.

Concept introduction: Most biological molecules have both charged (polar) and uncharged (non-polar) segments and are therefore simultaneously hydrophilic and hydrophobic. Water has a propensity to hydrate the hydrophilic segment of an amphiphile, but it also tends to eliminate the hydrophobic segment. Micelles are globules in which the hydrophobic groups are present in the central portion, away from the solvent, and hydrophilic groups are arranged at the surface directed toward the aqueous solution.
