The detergent forms a structure called a "micelle" to sequester dirt/grease/oil and embed it to its non-polar tail leaving the polar head outside which can be easily washed with water. Soaps/detergents in the form of micelle cleans the (dirt) oil as the oil will be collected at the centre of micelle. This property of soap makes it an emulsifier.
