You may have heard relatives or other friends raving about their new "instant pot." These are electric
versions of pressure cookers. Pressure cookers, as the name indicates, manipulate the pressure of the
cooking system to speed up cooking time.
A chef's pressure cooker can more than double the pressure inside of the pot compared to a pot of boiling water under
normal kitchen conditions. When the pressure cooker is used, the water's boiling point is raised and the temperature of
the steam inside the pressure cooker also increases.
