Introduction
Vitamins are essential micronutrients in our diet. We need them in small amounts to stay
healthy. Although they were originally thought to be "vital amines," we now know that there are
two categories of vitamins: fat-soluble (A, D, E, K) and water-soluble (the B complex and C).
Most vitamins act as cofactors with metabolic enzymes to maintain our life processes.
Vitamin C, or ascorbic acid, is a water-soluble molecule that acts as an antioxidant, i.e. if
oxidizing agents attack a cell, then the vitamin C acts as a target in place of another more
important target such as a protein. Vitamin C deficiency results in a disease called scurvy, which
is characterized by skin lesions, bleeding gums, and tooth loss.
This experiment will quantitatively analyze an over-the-counter Vitamin C tablet for the mass of
Vitamin C. lodine reacts with Vitamin C by an oxidation process as indicated by the following
reaction:

Note that one mole of iodine reacts with one mole of Vitarain C. la this experiament, a
solution of Vitamin C (made from a tablet) is added to a solution containing excess iodine
(with known concentration). Vitamin C is the limiting rcactant; all of the Vitamin C reacts
and leaves some iodine unreacted. The amount of iodine in excess is determined by titration
with the standardized sodium thiosulfate from Lab 4. Since the total (initial) amount of iodine
was known. and the amount of excess iodine was determined in the titration the amount of
iodine that reacted with vitamin C can be determined by the dillerence. Thus, the ansount of
vitamin C can be determined. The proces of titrating an excess amount of a reactant not
consumed in a reaction is called a hack titration
