Short description of the restaurant. What is the concept?
Café Boulud is a fine dining Brasserie which serves traditional French cuisine inspired by Chef Daniel and his family. Furthermore, Café Boulud also has a bar which serves a variety of classic and newly created cocktails. Moreover, this café brings a vintage ambiance from its comforting interior architecture, and décor. Short description of the existing and/or intended market for the restaurant.
The intended market for Café Boulud is very high end because of the location. Café Boulud is located at the Four Seasons Hotel in Yorkville, Toronto. Furthermore, this is a unique selling point because it is not only inside of a lavish and luxurious hotel, but also in a very high-end neighbourhood. In this case, customers such as celebrities, business officials, tourists, and overall high-class customers come and enjoy this French Brasserie.
Why have you chosen this type of establishment for your intended market?
I have chosen this type of establishment for my intended market because of the pure aesthetic of the café as well as the exquisite food they have to offer. My intended market being high-class, definitely is attracted to expensive delicacies such as escargot (snails) and much more. Why have you chosen these specific menu items for your particular market? Explain your choices.
I have chosen these specific menu items for my particular market because I wanted to choose authentic and traditional French cuisines along with a variety of exotic and unique desserts. For example, I chose escargots for appetizers because the snails are imported from Burgundy in France. I chose pappardelle for
my main because it has a French truffle used in it, and I chose hazelnut and chocolate profiteroles for the dessert because profiteroles are a classic and traditional French desert with choux pastry.
